This course has been created with the emphasis on seasonal ingredients. Indulge yourself for a week with great food, good company and spectacular surroundings. You cook during the day, a mixture of hands on and demonstrations, with lunch and dinner both your creations. In the evening, after a wine tasting, guests are invited back into the kitchen again where you watch the finishing touches being put to a truly gourmet dinner. You dine overlooking the Florence Court mountains. During your week there are excursions to local producers as well as to areas of interest and beauty. The school’s spectacular setting means you’re never so short of things to do, even when you’re not cooking – there’s tennis, croquet, boats for hire, superb fishing, beautiful walks and can be as relaxed or fun-packed as you want it to be!
The purpose built Cookery School is located close to the estate's main courtyard and your accommodation. The kitchen is warm and inviting, constructed mainly from wood, with both an Aga as well as conventional gas & electric cookers. The workstations are designed for guests to work comfortably in pairs and are adjustable in height and wheelchair friendly .Beautifully designed to take advantage of natural daylight and with stunning views of the Florence Court Mountains, it’s a beautiful space to work in.
The culinary theme for the week is woven around modern and traditional Irish cuisine – with an emphasis on entertaining in the home for friends & family. It's an immense privilege in our times to cook with local seasonal produce and this course does just that. You'll be cooking with Irish lamb, wild salmon or whatever the treat of the season is. All recipes are cooked from scratch by you, and the atmosphere is fun and relaxed.

On your arrival, you will be shown to the Castle (a member of the prestigious Blue Book). There you will have time to relax and change for dinner.
7.30pm: Meet for drinks in the cookery school where you will meet Liz Moore, your tutor for the week. Liz will chat to you about the course over dinner.

10am: The course starts in the cookery school after a leisurely breakfast in the Castle. Each day will start with bread making and then carry on with prep. for lunch and dinner.
11.30am: Coffee
1pm: Lunch
3.30-6pm: Prep. for dinner.
7.30pm: Dinner at the Castle

9.30am: Depart for Florence Court a National Trust Property, where a guide will take you around the historic Georgian House.
13.00: Return to Belle Isle Estate, for a picnic lunch on the Lake on board “Trasna”, a 30 foot motor cruiser, built in 1954. Monastic sites on island can be visited.
7.30pm Dinner out at the famous Irish Black Lion Restaurant (chef Nevin McGuire)
